Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 28 oz canned tomatoes
  • 2 tbsp tomato paste
  • 2 cups vegetable broth
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup heavy cream

Method
 

  1. Heat olive oil in a pot and sauté onion until soft.
  2. Add garlic and tomato paste, cook briefly.
  3. Add tomatoes and broth, season and simmer.
  4. Blend soup until smooth.
  5. Stir in cream and adjust seasoning before serving.
