Ingredients
  

Wafer Layers
  • 1.5 cups gluten-free flour blend with xanthan gum
  • 0.25 cup cornstarch
  • 0.5 cup powdered sugar
  • 0.25 tsp salt
  • 0.5 cup unsalted butter melted
  • 2 egg whites
  • 1 tsp vanilla extract
  • 3 tbsp milk
Chocolate Filling & Coating
  • 3 cups semi-sweet chocolate divided
  • 3 tbsp unsalted butter divided
  • 1 tbsp coconut oil

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  2. Whisk gluten-free flour, cornstarch, powdered sugar, and salt.
  3. Mix in melted butter, egg whites, vanilla, and milk until smooth.
  4. Spread thin layer and bake 8–10 minutes until crisp.
  5. Cool completely and repeat for remaining batter.
  6. Melt chocolate and butter for filling.
  7. Layer wafers with chocolate filling and chill until firm.
  8. Cut into bars, dip in melted chocolate with coconut oil, and let set.

Notes

Use high-quality chocolate for best flavor and snap. Chill layers before slicing for cleaner cuts.
