Ingredients
  

Shrimp Filling
  • 1 lb raw shrimp peeled and deveined
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1.5 cups shredded cheese
  • 4 whole wheat tortillas large
Fresh Tomato Avocado Salsa
  • 1 avocado diced
  • 1 cup cherry tomatoes chopped
  • 0.25 cup red onion diced
  • 2 tbsp cilantro chopped
  • 1 lime juiced

Equipment

  • Large skillet
  • Mixing bowls
  • Cutting board

Method
 

  1. Season shrimp with spices.
  2. Cook shrimp in olive oil with garlic 2–3 minutes per side.
  3. Mix salsa ingredients in bowl.
  4. Assemble tortillas with cheese and shrimp.
  5. Cook quesadillas 2–3 minutes per side until golden.
  6. Slice and serve with salsa.

Notes

Do not overcook shrimp. Best reheated in skillet for crisp texture.
