Method
- Bring 2 cups water to a boil. Add hibiscus petals or tea bags and steep for 10 minutes.
- Strain the hibiscus tea into a bowl or pitcher and allow to cool slightly.
- Blend strawberries with 1/4 cup hibiscus tea until smooth.
- In a pitcher, combine strawberry puree, lemon juice, honey or simple syrup, and remaining hibiscus tea. Stir well.
- Add cold water or sparkling water. Taste and adjust sweetness if needed. Chill for 30 minutes.
- Serve over ice and garnish with lemon slices, strawberry slices, and mint leaves.
Notes
For a smoother drink, strain the strawberry puree through a fine mesh sieve to remove seeds. Use sparkling water for a fizzy version.
