  • 1 cup plain Greek yogurt
  • 0.5 cup radishes finely grated
  • 1 small cucumber peeled, seeded, grated
  • 2 cloves garlic minced
  • 2 tsp olive oil extra virgin
  • 1 tsp lemon juice fresh
  • 2 tbsp dill fresh, chopped
  • 0.25 tsp sea salt adjust to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Grate radishes and cucumber. Squeeze excess moisture from cucumber.
  2. In a medium bowl, combine Greek yogurt, garlic, olive oil, lemon juice, and salt.
  3. Fold in grated radishes, cucumber, and chopped dill.
  4. Season with black pepper and adjust salt or lemon juice as needed.
  5. Cover and refrigerate for at least 30 minutes.
  6. Garnish with radish slices, dill sprigs, and paprika before serving.

Notes

Can be stored in an airtight container in the refrigerator for up to 3 days.
