Ingredients
  

Cookie Batter
  • 1 cup rolled oats
  • 0.75 cup whole wheat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.33 cup coconut oil melted
  • 0.5 cup honey
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup carrots finely grated
  • 0.25 cup walnuts optional
  • 0.25 cup raisins optional

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Whisk oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Mix melted coconut oil and honey until smooth. Add egg and vanilla.
  4. Stir in grated carrots.
  5. Combine wet and dry ingredients until just mixed.
  6. Scoop onto baking sheet and flatten slightly.
  7. Bake 12–15 minutes until lightly golden.
  8. Cool on wire rack before serving.

Notes

Do not overbake for soft texture. Store in airtight container or freeze for longer storage.
