Method
- Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
- Whisk oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Mix melted coconut oil and honey until smooth. Add egg and vanilla.
- Stir in grated carrots.
- Combine wet and dry ingredients until just mixed.
- Scoop onto baking sheet and flatten slightly.
- Bake 12–15 minutes until lightly golden.
- Cool on wire rack before serving.
Notes
Do not overbake for soft texture. Store in airtight container or freeze for longer storage.
