Ingredients
  

Batter
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 3 ripe bananas mashed
  • 0.5 cup plain Greek yogurt
  • 2 eggs large
  • 0.33 cup honey or maple syrup
  • 0.25 cup coconut oil melted
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries diced

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper.
  2. Whisk flour, baking soda, baking powder, salt, and cinnamon in a bowl.
  3. In another bowl, mash bananas and mix with yogurt, eggs, sweetener, oil, and vanilla.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fold in diced strawberries carefully.
  6. Pour into loaf pan and bake 50–60 minutes until done.
  7. Cool before slicing and serving.

Notes

Use very ripe bananas for best sweetness. Toss strawberries in flour before folding to prevent sinking.
