Method
- Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper.
- Whisk flour, baking soda, baking powder, salt, and cinnamon in a bowl.
- In another bowl, mash bananas and mix with yogurt, eggs, sweetener, oil, and vanilla.
- Combine wet and dry ingredients gently until just mixed.
- Fold in diced strawberries carefully.
- Pour into loaf pan and bake 50–60 minutes until done.
- Cool before slicing and serving.
Notes
Use very ripe bananas for best sweetness. Toss strawberries in flour before folding to prevent sinking.
