Cupcake Batter
  • 1.75 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup cream soda
  • 0.25 cup butterscotch sauce
Butterbeer Frosting
  • 0.75 cup unsalted butter softened
  • 2.5 cups powdered sugar
  • 0.5 cup butterscotch sauce
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan.
  2. Whisk dry ingredients together and set aside.
  3. Cream butter and sugars until light and fluffy.
  4. Add eggs, vanilla, and butterscotch sauce.
  5. Alternate adding dry ingredients and cream soda.
  6. Bake 18–22 minutes and cool completely.
  7. Prepare frosting and frost cooled cupcakes.
