Ingredients
  

Main Ingredients
  • 2 cups cooked ham finely diced
  • ½ cup mayonnaise
  • 1 tbsp Dijon mustard optional
  • ¼ cup celery finely chopped
  • ¼ cup onion finely chopped
  • 3 eggs hard-boiled and chopped
  • 2 tbsp sweet pickle relish
  • salt and pepper to taste
  • paprika for garnish
  • fresh parsley for garnish

Method
 

  1. Dice cooked ham, chop celery, onion, and hard-boiled eggs. Place in a mixing bowl.
  2. In a small bowl, mix mayonnaise, Dijon mustard, sweet pickle relish, salt, and pepper.
  3. Pour dressing over ham mixture and fold gently until evenly coated.
  4. Taste and adjust seasoning if needed.
  5. Cover and refrigerate for at least 30 minutes.
  6. Serve on bread, crackers, or lettuce. Garnish with paprika and parsley.

Notes

Adjust creaminess and seasoning to taste. Leftover holiday ham works great.
