Ingredients
  

Egg Mixture
  • 8 large eggs
  • 0.5 cup milk
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 0.25 cup chopped onion
  • 0.25 cup diced bell pepper
  • 2 tbsp chopped parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. Whisk eggs and milk until smooth.
  3. Stir in ham, cheese, vegetables, and seasoning.
  4. Pour mixture evenly into muffin cups.
  5. Bake 18–22 minutes until centers are set.
  6. Cool slightly before removing and serving.

Notes

Store in refrigerator up to 4 days or freeze up to 2 months.
