- Peel and dice potatoes into ½-inch cubes. Chop onion, garlic, and carrots.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Brown ground beef and season with salt and pepper. Remove from pan.
- Add remaining olive oil to the pan. Sauté onions and garlic for 2–3 minutes. Add carrots and potatoes.
- Season vegetables with smoked paprika, thyme, rosemary, salt, and pepper.
- Return beef to the pan and stir to combine.
- Add tomato paste, beef broth, and Worcestershire sauce. Cover and simmer 15–20 minutes until potatoes are tender.
- Stir in frozen peas and cook 3–5 minutes until heated through.
- Optional: sprinkle shredded cheddar cheese on top, cover to melt.
- Garnish with chopped parsley and serve warm.
