  • 1 lb ground beef
  • 4 medium russet potatoes peeled and diced
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup frozen peas
  • 2 tbsp olive oil
  • 1 tsp salt adjust to taste
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 0.5 cup shredded cheddar cheese optional garnish
  • 2 tbsp fresh parsley chopped, for garnish

Equipment

  • Large skillet or sauté pan

Method
 

  1. Peel and dice potatoes into ½-inch cubes. Chop onion, garlic, and carrots.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Brown ground beef and season with salt and pepper. Remove from pan.
  3. Add remaining olive oil to the pan. Sauté onions and garlic for 2–3 minutes. Add carrots and potatoes.
  4. Season vegetables with smoked paprika, thyme, rosemary, salt, and pepper.
  5. Return beef to the pan and stir to combine.
  6. Add tomato paste, beef broth, and Worcestershire sauce. Cover and simmer 15–20 minutes until potatoes are tender.
  7. Stir in frozen peas and cook 3–5 minutes until heated through.
  8. Optional: sprinkle shredded cheddar cheese on top, cover to melt.
  9. Garnish with chopped parsley and serve warm.
