- In a large skillet, heat 1 tbsp olive oil over medium heat. Add diced potatoes, season with 1/2 tsp salt and 1/4 tsp black pepper. Cook 12–15 minutes until golden and crispy. Remove and set aside.
- In the same skillet, sauté onion and garlic for 2–3 minutes until fragrant. Add bell pepper and cook 2 more minutes.
- Push vegetables to the side, add ground beef, season with paprika, thyme, remaining salt and pepper. Cook 6–8 minutes until browned.
- Return potatoes to the skillet, fold gently with beef and vegetables. Add butter and stir until melted and coated.
- Reduce heat, cover, and cook 3–5 minutes. Sprinkle with parsley and serve hot.
Notes
For extra flavor, add a splash of beef broth while combining beef and potatoes.
