Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 3 cups cooked chicken shredded
  • 2 cups green enchilada sauce
  • 3 cups chicken broth
  • 1 cup corn
  • 1 cup white beans drained
  • 8 oz cream cheese softened
  • 1.5 cups shredded cheese

Equipment

  • Large Pot or Dutch Oven
  • Wooden spoon
  • Cutting board
  • Knife

Method
 

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in chicken, enchilada sauce, broth, corn, and beans.
  4. Season and simmer for 20 minutes.
  5. Add cream cheese and stir until melted.
  6. Add shredded cheese and stir until smooth.
  7. Finish with lime juice and cilantro. Serve hot.

Notes

Adjust spice level by choosing mild or hot green enchilada sauce.
