Ingredients
  

Chicken Marinade
  • 1.5 lb chicken breasts boneless skinless
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Bowls
  • 3 cups cooked rice
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup feta cheese crumbled

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Marinate chicken for at least 30 minutes.
  3. Cook chicken in a skillet or grill pan until fully cooked.
  4. Rest and slice chicken.
  5. Assemble bowls with rice, chicken, vegetables, and feta.

Notes

Serve with tzatziki sauce and fresh herbs for best flavor.
