Ingredients
  

Popcorn
  • 10 cups popped popcorn
Caramel Marshmallow Sauce
  • 0.5 cup unsalted butter
  • 1 cup brown sugar packed
  • 0.25 cup light corn syrup
  • 0.5 tsp salt
  • 0.5 tsp baking soda
  • 1 tsp vanilla extract
  • 2 cups mini marshmallows

Method
 

  1. Place popped popcorn in a large heatproof bowl, removing unpopped kernels.
  2. Melt butter in a saucepan over medium heat.
  3. Add brown sugar, corn syrup, and salt. Stir and bring to a gentle boil.
  4. Cook for 4–5 minutes until thickened and glossy.
  5. Remove from heat and stir in baking soda and vanilla.
  6. Add marshmallows and stir until partially melted and gooey.
  7. Pour mixture over popcorn and gently toss to coat evenly.
  8. Let cool slightly before serving.

Notes

For extra gooey popcorn, serve warm. Do not refrigerate.
