Method
- Place popped popcorn in a large heatproof bowl, removing unpopped kernels.
- Melt butter in a saucepan over medium heat.
- Add brown sugar, corn syrup, and salt. Stir and bring to a gentle boil.
- Cook for 4–5 minutes until thickened and glossy.
- Remove from heat and stir in baking soda and vanilla.
- Add marshmallows and stir until partially melted and gooey.
- Pour mixture over popcorn and gently toss to coat evenly.
- Let cool slightly before serving.
Notes
For extra gooey popcorn, serve warm. Do not refrigerate.
