  • 1.5 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp cloves
  • 2 eggs large
  • 1.75 cups milk
  • 0.25 cup unsalted butter melted
  • 0.25 cup molasses
  • 1 tsp vanilla extract

Method
 

  1. In a bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and spices.
  2. In another bowl, whisk eggs, milk, melted butter, molasses, and vanilla extract.
  3. Combine wet and dry ingredients gently until just mixed.
  4. Heat a buttered skillet over medium heat.
  5. Pour batter onto skillet and cook until bubbles form.
  6. Flip and cook until golden and fluffy.
  7. Serve warm with butter and maple syrup.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking.
