Ingredients
  

Chicken
  • 2 lbs bone-in chicken thighs
  • 2 tbsp fresh ginger julienned
  • 1 tsp salt
  • 0.5 tsp white pepper
Spring Onion Oil
  • 5 stalks spring onions chopped
  • 2 tbsp fresh ginger minced
  • 0.33 cup neutral oil
  • 0.5 tsp salt

Equipment

  • Steamer
  • Heatproof plate
  • Small saucepan
  • Knife

Method
 

  1. Season chicken with salt and white pepper.
  2. Place chicken on heatproof plate and top with ginger.
  3. Steam for 20–25 minutes until cooked through.
  4. Combine scallions, ginger, and salt in a bowl.
  5. Heat oil until hot and pour over scallion mixture.
  6. Spoon spring onion oil over chicken before serving.

Notes

Do not overcook. Rest chicken before slicing for best texture.
