- Boil salted water and cook pasta until al dente. Reserve pasta water and drain.
- Sauté shallot in olive oil until soft.
- Add garlic and cook briefly.
- Stir in tomato paste and cook until darkened.
- Add red pepper flakes and vodka; simmer.
- Stir in heavy cream and butter until smooth.
- Add pasta and reserved water; toss to coat.
- Finish with Parmesan and basil before serving.
Notes
Adjust spice level to preference. Use freshly grated Parmesan for best texture.
