Ingredients
  

Pasta
  • 12 oz penne pasta
  • 0.25 cup olive oil
  • 1 shallot finely diced
  • 2 cloves garlic minced
  • 0.25 cup tomato paste
  • 0.5 tsp red pepper flakes
  • 0.25 cup vodka
  • 0.5 cup heavy cream
  • 1 tbsp unsalted butter
  • 0.5 cup Parmesan cheese freshly grated

  • Skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Sauté shallot in olive oil until soft. Add garlic and cook briefly.
  3. Add tomato paste and cook until slightly darkened.
  4. Stir in red pepper flakes and vodka. Simmer 2–3 minutes.
  5. Reduce heat and mix in heavy cream and butter.
  6. Add pasta and Parmesan. Toss, adding reserved pasta water as needed.
  7. Season to taste and garnish before serving.

Notes

Adjust spice level to preference. Use freshly grated Parmesan for best texture.
