Method
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
- Sauté shallot in olive oil until soft. Add garlic and cook briefly.
- Add tomato paste and cook until slightly darkened.
- Stir in red pepper flakes and vodka. Simmer 2–3 minutes.
- Reduce heat and mix in heavy cream and butter.
- Add pasta and Parmesan. Toss, adding reserved pasta water as needed.
- Season to taste and garnish before serving.
Notes
Adjust spice level to preference. Use freshly grated Parmesan for best texture.
