Ingredients
  

Meatloaf
  • 1 lb ground chicken
  • 0.75 cup breadcrumbs
  • 0.5 cup milk
  • 0.75 cup grated parmesan cheese
  • 2 eggs large
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Soak breadcrumbs in milk for 2–3 minutes until soft.
  3. In a large bowl, combine all ingredients until just mixed.
  4. Shape mixture into a loaf and place on baking sheet.
  5. Bake for 40–45 minutes until internal temperature reaches 165°F (74°C).
  6. Rest for 10 minutes before slicing and serving.

Notes

Do not overmix to keep the meatloaf tender and juicy.
