Chicken and Potatoes
  • 8 chicken drumsticks skin-on
  • 1.5 lb baby potatoes halved
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter melted
  • 4 cloves garlic minced
  • 0.75 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken drumsticks dry and set aside.
  3. Toss potatoes with olive oil, salt, pepper, paprika, and garlic powder.
  4. Arrange potatoes on the baking sheet, leaving space for chicken.
  5. Mix melted butter, garlic, Italian seasoning, onion powder, salt, and pepper.
  6. Coat chicken drumsticks in the garlic butter mixture.
  7. Place chicken among potatoes and sprinkle with half the Parmesan.
  8. Bake for 35 minutes, flip chicken, stir potatoes, add remaining Parmesan, and bake 25 minutes more.

Notes

For extra crispiness, broil for 2–3 minutes before serving.
