Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 0.75 cup powdered sugar
  • 1 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 0.5 cup rainbow sprinkles
Frosting Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp cream or milk

Method
 

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  2. Beat butter until smooth, then mix in powdered sugar until fluffy.
  3. Add vanilla and salt, mixing until combined.
  4. Gradually add flour and mix just until dough forms.
  5. Fold in sprinkles gently.
  6. Roll dough, chill briefly, cut into rounds, and place on baking sheets.
  7. Bake 12–15 minutes until set. Cool completely.
  8. Prepare frosting by beating butter, powdered sugar, vanilla, and cream.
  9. Sandwich cookies with frosting and serve.

Notes

Do not overbake to maintain tender shortbread texture.
