Method
- In a large skillet over medium heat, melt butter with olive oil. Add onions, sugar, salt, and pepper. Cook until golden brown and caramelized, about 25–30 minutes.
- In another skillet, heat olive oil over medium heat. Add mushrooms and thyme, season with salt and pepper, and cook until tender, about 7–10 minutes.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface. Transfer to baking sheet. Score a 1-inch border, brush edges with beaten egg.
- Spread caramelized onions inside border. Layer mushrooms on top, sprinkle Gruyère cheese, and drizzle balsamic vinegar.
- Bake 20–25 minutes until puff pastry is golden and cheese is melted.
- Garnish with fresh thyme, slice, and serve warm.
Notes
Make sure to cook onions slowly for best flavor. Puff pastry can be store-bought or homemade.
