Ingredients
  

Burrito Filling
  • 10 large flour tortillas
  • 10 eggs large
  • 0.25 cup milk
  • 2 cups breakfast potatoes diced
  • 1.5 cups shredded cheese
  • 1 cup cooked breakfast sausage crumbled

Method
 

  1. Cook diced potatoes in a skillet until golden and tender. Set aside to cool.
  2. Cook breakfast sausage until fully browned. Drain excess fat.
  3. Whisk eggs with milk, salt, and pepper. Scramble gently until just set.
  4. Allow all fillings to cool completely before assembling burritos.
  5. Fill tortillas with eggs, potatoes, sausage, and cheese.
  6. Wrap burritos tightly, wrap in foil, and freeze for up to 3 months.

Notes

Cool fillings completely to prevent soggy burritos after freezing.
