Ingredients
  

Grilled Chicken
  • 2 chicken breasts boneless, skinless
  • 1 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Salad Base
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 0.25 cup red onion thinly sliced
Sweet Onion Dressing
  • 0.25 cup sweet onion grated
  • 0.25 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Method
 

  1. Season chicken with olive oil, garlic powder, paprika, salt, and pepper.
  2. Grill chicken over medium heat for 5–7 minutes per side until fully cooked.
  3. Blend sweet onion, olive oil, vinegar, honey, mustard, salt, and pepper until smooth.
  4. Assemble salad with greens, vegetables, and sliced chicken.
  5. Drizzle with sweet onion dressing and serve immediately.

Notes

Store dressing separately for best meal prep results.
