Ingredients
  

Sweet Potato Base
  • 4 cups mashed sweet potatoes from boiled sweet potatoes
  • 0.5 cup unsalted butter melted
  • 0.5 cup brown sugar packed
  • 2 eggs large
  • 0.33 cup milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
Topping
  • 2 cups mini marshmallows

Equipment

  • Pot for boiling potatoes
  • Potato masher or hand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Boil sweet potatoes until fork-tender, then mash until smooth.
  3. Mix mashed sweet potatoes with melted butter until creamy.
  4. Add brown sugar, eggs, milk, vanilla, cinnamon, nutmeg, and salt. Mix well.
  5. Spread mixture evenly into prepared baking dish.
  6. Bake for 25 minutes until heated through.
  7. Remove from oven, top with marshmallows, and return to oven.
  8. Bake 10–15 minutes until marshmallows are golden and puffed.

Notes

Add marshmallows only near the end to prevent burning. For extra browning, broil briefly.
