Ingredients
  

Chicken
  • 2 lbs boneless skinless chicken breast cut into cubes
  • 1 cup cornstarch
  • 2 eggs beaten
  • 0.5 cup all-purpose flour
  • oil for frying
Sauce
  • 0.75 cup ketchup
  • 0.5 cup rice vinegar
  • 0.5 cup brown sugar
  • 2 tbsp soy sauce
  • 0.5 cup pineapple juice
  • 1 tbsp cornstarch
Vegetables
  • 2 bell peppers cut into chunks
  • 1 onion cut into chunks
  • 1 cup pineapple chunks

Equipment

  • Mixing bowls
  • Deep skillet or Dutch oven
  • Whisk

Method
 

  1. Season chicken and coat in cornstarch, egg, and flour.
  2. Fry in hot oil until golden and cooked through.
  3. Simmer sauce ingredients until thickened.
  4. Sauté vegetables briefly.
  5. Combine chicken, vegetables, and sauce. Toss and serve.

Notes

For extra crispiness, double fry the chicken. Adjust sweetness or tanginess to preference.
