Ingredients
  

Soup Base
  • 1 cup dried lentils rinsed
  • 1 onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 6 cups vegetable broth
  • 1-2 lemons juiced

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft, then add carrots and celery.
  3. Add garlic and cumin, stirring until fragrant.
  4. Add lentils and vegetable broth, bring to a boil.
  5. Reduce heat and simmer until lentils are tender.
  6. Season with salt and pepper.
  7. Stir in lemon juice and zest before serving.

Notes

Add lemon juice at the end for the brightest flavor.
