Ingredients
  

Corn Casserole Base
  • 1 box Jiffy Corn Muffin Mix
  • 1 can whole kernel corn drained
  • 1 can creamed corn
  • 1 cup sour cream
  • 0.5 cup unsalted butter melted
  • 2 eggs large

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Whisk melted butter, sour cream, and eggs until smooth.
  3. Stir in whole kernel corn and creamed corn.
  4. Add Jiffy Corn Muffin Mix and stir until just combined.
  5. Pour batter into baking dish and smooth the top.
  6. Bake 45–50 minutes until golden and set.
  7. Rest 5–10 minutes before serving.

Notes

Add cheese or jalapeños for flavor variations.
