Ingredients
  

Pancake Batter
  • 1.5 cups all-purpose flour
  • 3.5 tsp baking powder
  • 1 tbsp granulated sugar
  • 0.5 tsp salt
  • 1.25 cups milk
  • 1 egg large
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. Whisk together flour, baking powder, sugar, and salt.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients gently without overmixing.
  4. Heat skillet over medium and lightly grease.
  5. Pour 1/4 cup batter per pancake onto skillet.
  6. Cook until bubbles form, flip, and cook until golden.

Notes

Do not overmix batter. Let rest 5 minutes for extra fluffiness.
