Burrito Ingredients
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 cup cooked shredded chicken optional
  • 0.5 cup black beans drained and rinsed
  • 0.25 cup onion diced
  • 0.25 cup bell pepper diced
  • 2 tbsp butter for grilling
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 0.5 tsp ground cumin
  • 0.5 cup salsa for dipping
  • 0.25 cup sour cream optional
  • 2 tbsp cilantro optional garnish

Method
 

  1. In a bowl, combine shredded chicken, black beans, onion, bell pepper, garlic powder, smoked paprika, chili powder, cumin, salt, and pepper.
  2. Warm tortillas in a dry skillet for 10–15 seconds per side until flexible.
  3. Lay one tortilla flat, add 1/2 cup cheese in the center, then 1/4 of the filling, and another 1/4 cup cheese on top.
  4. Fold sides inward and roll the burrito tightly from bottom to top.
  5. Heat skillet over medium heat and melt 1 tbsp butter. Grill burritos seam-side down for 2–3 minutes until golden brown.
  6. Flip burritos and grill other side for 2–3 minutes until crispy and cheese is melted.
  7. Remove from skillet, rest for 1 minute, slice in half, and serve with salsa and sour cream.

Notes

For a crispier burrito, brush the tortilla with a thin layer of butter before grilling. For extra spice, add jalapeños or hot sauce to the filling.
