- In a bowl, combine shredded chicken, black beans, onion, bell pepper, garlic powder, smoked paprika, chili powder, cumin, salt, and pepper.
- Warm tortillas in a dry skillet for 10–15 seconds per side until flexible.
- Lay one tortilla flat, add 1/2 cup cheese in the center, then 1/4 of the filling, and another 1/4 cup cheese on top.
- Fold sides inward and roll the burrito tightly from bottom to top.
- Heat skillet over medium heat and melt 1 tbsp butter. Grill burritos seam-side down for 2–3 minutes until golden brown.
- Flip burritos and grill other side for 2–3 minutes until crispy and cheese is melted.
- Remove from skillet, rest for 1 minute, slice in half, and serve with salsa and sour cream.
Notes
For a crispier burrito, brush the tortilla with a thin layer of butter before grilling. For extra spice, add jalapeños or hot sauce to the filling.
