Ingredients
  

Vegetables
  • 2 cups cherry tomatoes halved
  • 1 cucumber sliced into half-moons
  • 1 red onion thinly sliced
  • 0.5 cup Kalamata olives pitted
  • 0.5 cup feta cheese crumbled
  • 0.25 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • to taste salt and pepper
  • 0.5 green bell pepper optional, sliced
  • fresh parsley or basil optional garnish

Method
 

  1. Wash and halve cherry tomatoes. Slice cucumber into half-moons. Thinly slice red onion and optional bell pepper.
  2. In a large mixing bowl, combine vegetables and olives. Gently toss to mix.
  3. Sprinkle crumbled feta over the salad.
  4. Whisk olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  5. Pour dressing over salad and gently toss to coat.
  6. Garnish with fresh parsley or basil if desired and serve immediately.

Notes

For best results, serve immediately after tossing with dressing to maintain crispness.
