- Wash and halve cherry tomatoes. Slice cucumber into half-moons. Thinly slice red onion and optional bell pepper.
- In a large mixing bowl, combine vegetables and olives. Gently toss to mix.
- Sprinkle crumbled feta over the salad.
- Whisk olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
- Pour dressing over salad and gently toss to coat.
- Garnish with fresh parsley or basil if desired and serve immediately.
