Method
- Bring a large pot of salted water to a boil and cook pasta until al dente.
- Add broccoli during the last 3–4 minutes of pasta cooking.
- Reserve 1/4 cup pasta water and drain.
- Heat olive oil or butter in a skillet and sauté garlic.
- Add cream, salt, pepper, and chili flakes; simmer briefly.
- Stir in Parmesan until melted.
- Add pasta and broccoli, tossing with reserved water.
- Cook one more minute, garnish, and serve.
Notes
Use freshly grated cheese and do not overcook broccoli for best texture.
