Ingredients
  

  • 2 cups cooked shredded chicken
  • 2 cups enchilada sauce red or green
  • 8 flour tortillas soft taco size
  • 2 cups shredded cheese
  • 1 onion diced
  • 2 cloves garlic minced

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté onion and garlic in olive oil until soft.
  3. Add chicken and spices, stirring to combine.
  4. Fill tortillas with chicken and cheese, roll, and place in dish.
  5. Cover with enchilada sauce and remaining cheese.
  6. Bake 20–25 minutes until bubbly and melted.
