  • 1 lb ground beef
  • 1 medium onion finely chopped
  • 1 red bell pepper diced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper
  • 4 large flour tortillas
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup cooked rice optional
  • 0.5 cup canned black beans rinsed and drained, optional
  • 2 tbsp olive oil
  • fresh cilantro chopped, for garnish
  • salsa or hot sauce for serving

Method
 

  1. Chop the onion and bell pepper, shred cheese, and rinse black beans if using.
  2. Heat olive oil in a skillet over medium-high heat. Cook onion and bell pepper for 2–3 minutes until softened.
  3. Add ground beef and cook until browned, breaking up chunks, about 5–6 minutes.
  4. Stir in garlic powder, chili powder, smoked paprika, cumin, salt, and black pepper. Cook 2 more minutes.
  5. Optional: Add cooked rice and black beans, stir to combine and heat through.
  6. Warm tortillas in a dry skillet or microwave until pliable.
  7. Assemble burritos: spoon beef mixture into center, top with cheese, fold sides and roll tightly.
  8. Optional: Place burritos in skillet 1–2 minutes per side until golden and cheese melts.
  9. Garnish with cilantro and serve with salsa or hot sauce.

Notes

Adjust spice levels based on preference. Burritos can be frozen for up to 1 month.
