Ingredients
  

Tea Infusion
  • 0.5 cup water plus extra for brewing
  • 2 bags Earl Grey tea or 2 tsp loose leaf
  • 1.5 tsp culinary lavender buds
  • 3 tbsp honey or maple syrup
Milkshake
  • 2 cups high-quality vanilla ice cream
  • 0.25 cup whole milk or oat milk
For Garnish (Optional)
  • Whipped cream
  • Shortbread cookies
  • Sprig of fresh lavender

Method
 

  1. Brew the infusion: Heat water to a near-boil. Remove from heat, add Earl Grey tea and lavender buds. Cover and steep for 7-10 minutes.
  2. Strain the tea through a fine-mesh sieve into a heatproof container. Discard tea bags and lavender.
  3. Stir honey into the warm tea until fully dissolved. Refrigerate until completely chilled, at least 30 minutes.
  4. Optional: Place your serving glasses in the freezer to chill for 10-15 minutes.
  5. In a powerful blender, combine the chilled tea infusion, vanilla ice cream, and milk.
  6. Blend on high for 30-45 seconds until smooth, creamy, and uniform. Adjust consistency with a splash more milk if too thick.
  7. Pour immediately into chilled glasses. Top with whipped cream, a cookie on the rim, and a lavender sprig. Serve with a straw.

Notes

Use only culinary-grade lavender. Brewing the tea strong is key for flavor. Ensure the infusion is fully chilled before blending to prevent a watery milkshake. For a stronger lavender flavor, steep for the full 10 minutes.
