- Brew the infusion: Heat water to a near-boil. Remove from heat, add Earl Grey tea and lavender buds. Cover and steep for 7-10 minutes.
- Strain the tea through a fine-mesh sieve into a heatproof container. Discard tea bags and lavender.
- Stir honey into the warm tea until fully dissolved. Refrigerate until completely chilled, at least 30 minutes.
- Optional: Place your serving glasses in the freezer to chill for 10-15 minutes.
- In a powerful blender, combine the chilled tea infusion, vanilla ice cream, and milk.
- Blend on high for 30-45 seconds until smooth, creamy, and uniform. Adjust consistency with a splash more milk if too thick.
- Pour immediately into chilled glasses. Top with whipped cream, a cookie on the rim, and a lavender sprig. Serve with a straw.
Notes
Use only culinary-grade lavender. Brewing the tea strong is key for flavor. Ensure the infusion is fully chilled before blending to prevent a watery milkshake. For a stronger lavender flavor, steep for the full 10 minutes.
