Ingredients
  

Topping
  • 0.5 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1 can pineapple slices drained, juice reserved
  • 12 maraschino cherries
Cake Batter
  • 1 box Duncan Hines yellow cake mix
  • 3 eggs
  • 0.5 cup vegetable oil
  • 1 cup pineapple juice from can

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Pour melted butter into the pan and sprinkle evenly with brown sugar.
  3. Arrange pineapple slices and cherries over the sugar layer.
  4. Prepare cake mix according to package directions, replacing water with pineapple juice.
  5. Pour batter gently over the fruit layer.
  6. Bake for 40–45 minutes until a toothpick comes out clean.
  7. Cool for 10 minutes, then invert onto a serving plate.

Notes

Allow cake to rest before flipping for best release.
