Ingredients
  

Jam Base
  • 5 ripe bananas sliced
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.25 cup dark rum
  • 2 tbsp lemon juice fresh
  • 1 tsp vanilla extract
  • 1 cinnamon stick
  • 0.25 tsp salt

Method
 

  1. Combine bananas, sugars, lemon juice, cinnamon stick, and salt in a saucepan.
  2. Cook over medium heat, stirring frequently until bananas soften.
  3. Reduce heat and simmer 20–25 minutes, mashing bananas to desired texture.
  4. Stir in rum and vanilla, simmer 5–10 minutes until thick.
  5. Remove cinnamon stick and transfer jam to jars.

Notes

Jam thickens as it cools. Adjust sweetness or rum level to taste.
