Method
- Combine bananas, sugars, lemon juice, cinnamon stick, and salt in a saucepan.
- Cook over medium heat, stirring frequently until bananas soften.
- Reduce heat and simmer 20–25 minutes, mashing bananas to desired texture.
- Stir in rum and vanilla, simmer 5–10 minutes until thick.
- Remove cinnamon stick and transfer jam to jars.
Notes
Jam thickens as it cools. Adjust sweetness or rum level to taste.
