Ingredients
  

Salad
  • 1 cup quinoa rinsed
  • 2 cups water
  • 2 cups cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup feta cheese crumbled
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh parsley or mint chopped
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest optional
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper to taste

Method
 

  1. Rinse quinoa thoroughly. Cook with water according to package instructions until fluffy. Let cool.
  2. Dice cucumbers, halve tomatoes, and finely chop red onion and herbs.
  3. In a small bowl, whisk olive oil, lemon juice, lemon zest, salt, and pepper.
  4. In a large bowl, combine cooled quinoa, vegetables, and herbs.
  5. Gently fold in feta cheese.
  6. Pour dressing over salad and toss gently to combine.
  7. Taste, adjust seasoning, and serve or chill briefly before serving.

Notes

This salad tastes even better after chilling for 20–30 minutes.
