Ingredients
  

Salad
  • 3 cucumbers sliced
  • 1.5 cups fresh mozzarella pearls
  • 0.25 cup fresh basil thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Slice cucumbers and place in a mixing bowl.
  2. Add drained mozzarella pearls and sliced basil.
  3. Whisk olive oil, lemon juice, salt, and pepper.
  4. Pour dressing over salad and toss gently.
  5. Adjust seasoning and serve immediately.

Notes

Best served fresh. Add balsamic glaze for extra flavor if desired.
