Ingredients
  

Main Ingredients
  • 3-4 lb beef chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 4 carrots chunked
  • 1.5 lb baby potatoes halved
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Equipment

  • Slow cooker
  • Large skillet
  • Cutting board

Method
 

  1. Season chuck roast with salt, pepper, and garlic powder.
  2. Sear roast in hot olive oil until browned on all sides.
  3. Place onions, garlic, carrots, and potatoes in slow cooker.
  4. Place roast on top of vegetables.
  5. Mix broth, Worcestershire, tomato paste, and herbs. Pour over roast.
  6. Cook on LOW for 8 hours or HIGH for 4–5 hours until tender.

Notes

For thicker gravy, simmer cooking liquid with cornstarch slurry before serving.
