Method
- Season chuck roast with salt, pepper, and garlic powder.
- Sear roast in hot olive oil until browned on all sides.
- Place onions, garlic, carrots, and potatoes in slow cooker.
- Place roast on top of vegetables.
- Mix broth, Worcestershire, tomato paste, and herbs. Pour over roast.
- Cook on LOW for 8 hours or HIGH for 4–5 hours until tender.
Notes
For thicker gravy, simmer cooking liquid with cornstarch slurry before serving.
