Ingredients
  

Chicken
  • 2 lb chicken breasts boneless, skinless
  • 0.5 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • 0.75 cup parmesan cheese grated
  • 0.5 cup dill pickles finely chopped
  • 1 tsp garlic powder
  • 1 tsp paprika

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Slice chicken breasts into even cutlets and pat dry.
  3. Set up breading station with flour, eggs, and breadcrumb mixture.
  4. Coat chicken in flour, egg, then breadcrumb mixture.
  5. Place on rack, lightly oil, and bake 20–25 minutes, flipping halfway.

Notes

For extra crunch, broil for 2 minutes at the end.
