Ingredients
  

Quinoa Patties
  • 2 cups cooked quinoa cooled
  • 1 cup grated carrot
  • 0.5 cup chopped onion
  • 2 eggs large
  • 0.75 cup breadcrumbs
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil for frying

Method
 

  1. In a large bowl, combine cooked quinoa, carrot, onion, and seasonings.
  2. Add eggs and breadcrumbs, mixing until the mixture holds together.
  3. Form mixture into evenly sized patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook patties 3–4 minutes per side until golden and crispy.
  6. Drain on paper towels and serve warm.

Notes

Serve with yogurt sauce, tahini, or fresh salad for a complete meal.
