Ingredients
  

Crispy Chicken
  • 2 chicken breasts boneless, skinless
  • 1 cup flour
  • 2 eggs
  • 1.5 cups panko breadcrumbs
  • 0.5 cup Parmesan cheese grated
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Caesar Dressing
  • 1 egg yolk
  • 2 cloves garlic minced
  • 1 tsp Dijon mustard
  • 1 tsp anchovy paste optional
  • 1 lemon juiced
  • 0.5 cup olive oil
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Prepare breading stations with flour, egg wash, and breadcrumb mixture.
  2. Coat chicken in flour, dip in egg, and cover with breadcrumbs.
  3. Fry until golden brown and cooked through.
  4. Whisk dressing ingredients until emulsified.
  5. Toss lettuce with dressing and top with sliced crispy chicken.

Notes

For extra crispiness, let breaded chicken rest 10 minutes before frying.
