Creamy Tomato Garlic Pasta

Ingredients
  

Pasta
  • 12 oz pasta penne or fettuccine
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 small onion chopped
  • 1 can crushed tomatoes 14–15 oz
  • 2 tbsp tomato paste
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • 0.25 tsp red pepper flakes optional
  • fresh basil for garnish

Equipment

  • Large pot
  • Skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted boiling water until al dente and reserve some pasta water.
  2. Heat olive oil in a skillet and sauté onion until soft.
  3. Add garlic and cook briefly until fragrant.
  4. Stir in crushed tomatoes and tomato paste, simmering several minutes.
  5. Season with salt, pepper, oregano, basil, and chili flakes.
  6. Lower heat and add cream, stirring until smooth.
  7. Mix in parmesan cheese until melted.
  8. Toss cooked pasta with sauce, adding pasta water if needed.
  9. Serve garnished with fresh basil and extra parmesan.

Notes

Use freshly grated parmesan for best melting and flavor.
