Ingredients

  • 12 oz penne or fettuccine pasta
  • 2 boneless skinless chicken breasts sliced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 small onion diced
  • 1 cup crushed tomatoes
  • 0.75 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika

Equipment

  • Large pot
  • Large skillet
  • Colander
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente, then drain.
  2. Season chicken with salt, pepper, and paprika.
  3. Heat olive oil in skillet and cook chicken until golden and cooked through; remove.
  4. Sauté onion, then add garlic and cook briefly.
  5. Add tomatoes and broth, then stir in cream and simmer.
  6. Mix in Parmesan and seasoning until sauce thickens.
  7. Return chicken and toss with pasta until coated.
  8. Serve garnished with basil.

Notes

Add reserved pasta water to adjust sauce consistency and garnish with fresh basil.
