Ingredients
  

Pasta
  • 400 g spaghetti
Chicken
  • 2 chicken breasts boneless skinless
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
Sauce
  • 2 tbsp butter
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup parmesan cheese grated
  • salt and black pepper to taste
  • fresh parsley for garnish

Method
 

  1. Cook spaghetti in salted boiling water until al dente, reserving some pasta water.
  2. Season chicken and cook in olive oil until golden and fully cooked, then slice.
  3. Sauté onion in butter until soft, then add garlic.
  4. Add chicken broth and simmer briefly.
  5. Stir in heavy cream and parmesan until smooth.
  6. Add spaghetti and chicken back to pan and toss to coat.
  7. Adjust seasoning, garnish with parsley, and serve.

Notes

Use freshly grated parmesan for best texture.
