Ingredients
  

Pasta & Seafood
  • 300 g short pasta
  • 400 g mixed seafood shrimp, fish, scallops
Sauce
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup seafood stock
  • 1 cup grated cheese
Topping
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook pasta until al dente, drain, and reserve some pasta water.
  3. Sauté onion in olive oil until soft, add garlic, then set aside.
  4. Melt butter, whisk in flour, then gradually add milk and stock to thicken.
  5. Stir in cheese, season, then add pasta, seafood, and onion mixture.
  6. Transfer to baking dish, top with breadcrumbs and parmesan.
  7. Bake 25–30 minutes until golden and bubbling.

Notes

Let rest 5 minutes before serving for best texture.
