Ingredients
  

Pasta
  • 12 oz pasta penne or fettuccine
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup whole milk
  • 1.5 cups pepper jack cheese shredded
  • 1 tsp black pepper freshly cracked
  • 0.25 tsp red pepper flakes optional
  • 0.5 tsp salt to taste

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Melt butter in a skillet over medium heat. Add garlic and sauté until fragrant.
  3. Add cream and milk, stirring gently and heating until warm.
  4. Stir in pepper jack cheese until melted and smooth.
  5. Season with black pepper, salt, and red pepper flakes.
  6. Add pasta to sauce and toss to coat, adding pasta water if needed.
  7. Garnish with parsley and serve hot.

Notes

Use freshly shredded cheese for the smoothest sauce.
