- Heat olive oil in a large pot over medium heat.
- Season chicken with salt and pepper, sear until golden, then remove.
- Sauté onion until soft, then add garlic.
- Stir in sun-dried tomatoes, seasoning, and paprika.

- Return chicken and cook until tender.
- Shred chicken and return to pot.
- Stir in cream, parmesan, and spinach until wilted.

Do not boil after adding cream to maintain a smooth texture.
